        Teodora Chef-owner Giancarlo Quadalti’s next project will be Viola, an homage to his Tuscan roots. His parents’ hometown sits on the border between Tuscany and Romagna. Violet (how would you know?) is the official color of Florence, it seems, just as Celeste (his Amsterdam Avenue beehive) references the sky blue of Naples, and the color of his birthplace, Ravenna, is white, as at sweetly inviting Bianca on Bleecker. (Bianca is also his grandmother’s name.) Borgo di Monasterio. Expect to be eating ribollita, panzanella, the local version of gnocchi (topini) and pork-studded arista di maiale. No site yet but gentle prices and “cash only” is how Quadalti and his partners run his rainbow. Recently, the chef cruised the hills of Tuscany with a gourmand investor, hitting Montalcino and Montepulciano and particularly loving the food at a resort.
